Apprentice chefs and TAFE Commercial Cookery students from across the state are invited to participate in a unique and exciting opportunity where they are challenged to create a new recipe using Kingfish.
All nominations must invent a new recipe using Kingfish.
Nominations will be judged by top Sydney chef Sean Connelly, Sydney Seafood School Manager Roberta Muir, and Delicious Magazine Food Editor Valli Little.

Finalists will be selected to participate in a Seafood Showdown at Sydney Seafood School where they will have the opportunity to create their own seafood masterpiece. Finalists will be required to prepare their recipe from raw ingredients at the Showdown. All food preparation costs and utensils will be supplied for the event. Apprentice Chefs are invited to bring in their own utensils and specific ingredients, other than Kingfish, if preferred. Finalists will be judged by the same panel.

Nominations Close
One nomination form and four written submissions outlining creative approach, technique and actual recipe must be received by 9am Monday, 2 February 2009.
Nominees must be an Apprentice Chef or TAFE Commercial Cookery student at time of registration. Nominees must supply a written reference with submission to confirm this status.
From these submissions, a short list will be selected by the judges.
The shortlisted apprentices will be invited to prepare their seafood recipe (four portions) for judging at the Sydney Seafood School on Monday, 23 February 2009.
All nominees must be able to attend the Seafood Showdown on Monday, 23 February 2009.
The winner of the Inspired by Seafood Award will be announced at the Seafood Excellence Awards Saturday, 14 March 2009.
